Anyways, things have been hectic this past month. Updating the house has been an ongoing process, but I'm happy to say that I've gotten most of my to-do things off of my list. The new school year started up, although I don't really feel like it ever ended, and with education budget cuts, everyone is feeling the impact the forced job cuts. And, I celebrated a birthday....yes, I'm now in the last year of my 20's...so sad.
Despite a crazy month, I still managed to eat, eat, eat! I subscribed to a bi-weekly CSA (community supported agriculture) box. A box of fresh, local veges and fruits gets delivered to my front door, and it's like Christmas every time!
My first box.
Here are some of the things I made with my box ingredients....
Lemongrass chicken with tofu, squash, and Thai basil
Tomato and corn pie
(I forgot to take a picture of the inside...
but it was a tasty savory pie filled with fresh corn, tomatoes, chives, and cheese)
Of course, I also baked some sweet treats. Here are a few of the things I remembered to take pictures of....
chocolate chip cookie dough!
(yes, I did make cookies out of it, but I probably ate a spoonful of dough for every 5 cookies I baked)
burnt sugar bundt cake with caramel rum frosting
(for my dad's birthday)
peanut butter and jelly bars
(not a very appealing picture)
